What is freeze dried? Freeze dried food is placed in a refrigerated vacuum, where, without thawing, it is dehydrated — ice disappears in the form of escaping water vapor. Cell structure remains intact, which results in excellent retention of flavor, color, shape, and nutritional value. Freeze dried food can be eaten as is, or hydrated quickly.

What is air dried? Our air dried vegetables, often generically called dehydrated vegetables, are specifically made by subjecting vegetables to heat, resulting in water evaporation. This process costs less than freeze dried. The physical size of the vegetables are reduced when air dried. When cooked, these vegetables hydrate nicely and often remain intact (versus crumbling apart), making them ideal for liquid cooking applications such as homemade soups and dips. There are no additives to our air dried vegetables — no preservatives such as sulfites.

Common uses: Camping food, backpacking food, survival food, snacks, and quick-and-easy home cooking. Our dried vegetables are used in salads, vegetable trail mixes, soups, casseroles, and camping meals.

Dried Dill

Dill weed is a unique perennial herbal plant in the sense that both its leaves as well as seeds are used as a seasoning. It is the member of the Umbelliferae family, a large group of flowering herbs and spices, which include carawayparsleycuminfennel, etc. Botanically,it belongs within the family of Apiaceae, of the genus: Anethum and scientifically named as Anethum graveolens.The plant requires warm summer climates with well-drained fertile soil to flourish. Dried Mint

Mint, also known as mentha, is actually a genus or group of around 15-20 types of plants including peppermint and spearmint. Mint oil is often used in toothpaste, gum, candy and beauty products while the leaves are used either fresh or dried for teas and food. Mint has one of the highest antioxidant capacities of any food.

Possible health benefits of consuming mint

Two tablespoons of mint provides 2 calories, 0.12 grams of protein, 0.48 grams carbohydrates, 0.03 grams of fat and 0.30 grams of fiber. Mint contains small amounts of potassium, magnesium, calcium, phosphorus, vitamin C and vitamin A.

Allergies: Mint plants contain an antioxidant known as rosmarinic acid, which has been studied for its effectiveness in relieving seasonal allergy symptoms. Because of rosmarinic acid’s anti-inflammatory properties, rosmarinic acid has been shown to be a promising treatment.

BARBERRY 

BARBERRY (Zereshk (زرشک) in Persian ; Berberis spp.,familyBerberidaceae). Species of this genus are found in the northern, eastern, and southeastern highlands of Iran (Alborz, Qaradāḡ in Azerbaijan, ranges of Khorasan, Bārez mountain in Kermān). The South Khorasan province in Iran is the main area of zereshk and saffron production in the world, especially around Birjand and Qaen. About 85% of production is in Qaen and about 15% in Birjand. There is evidence of cultivation of seedless barberry in South Khorasan two hundred years ago. They reach heights of 1 to 3 m, seldom reaching 4 m, and have long branches, copious thorns, denticulate leaves, and red berries which form in clusters on the outer branches in midspring, after the yellow flowers have shed their petals, and ripen in midsummer.

The barberry shrub produces edible berries that are a rich source of vitamin C. Barberry contains a chemical known as berberine that gives it its medicinal value. This chemical acts as an antibiotic to kill fungi, bacteria, and protozoa. The fruit, root bark, and stem of barberry contain chemical like protoberberin alkaloids and isoquinoline that are effective in treating a number of ailments. Barberry is also a rich source of B vitamins like thiamine and minerals like zinc. 

Barberry is effective in easing infection and inflammation of the urinary, respiratory, and gastrointestinal tracts. Common health problems like sinusitis, nasal congestion, sore throat, bronchitis, and candida infections are easily treatable with barberry. Skin conditions like psoriasis can also be treated with the help of barberry extracts.

Experts consider barberry an effective treatment for diarrhea, including diarrhea caused by food poisoning. To make zerešk-polowwashed barberries are sprinkled on strained boiled rice, more rice is poured on top, and the dish is then simmered. Addition of barberries to various sorts of soups imparts pleasant tartness. Cleaned chickens are stuffed with barberries and rice, walnuts, or other ingredients before being roasted or cooked.

In traditional medicine, barberries are classed as a cold, dry substance and thought to possess the properties that check diarrhea; strengthen the stomach, liver, and heart; eliminate excess bile; relieve thirst; and cool stomach heat, internal inflammations, and blood ebullition. Mixtures of barberries with hot drugs are considered useful for relief of blockages of the liver, bowels, and intestines; for cure of dysentery caused by coldness and weakness of the liver and bowels; and generally for the treatment of patients afflicted with cold (mabrūdīn).A barberry-wormwood mixture is thought to improve digestion, and barberry juice to prevent vomiting and fainting. The berries are said to cure stomach ulcers and dysentery due to bowel weakness and barberry poultices to relieve acute abscesses. A mixture of barberry, apple, and lemon juices with sugar is believed to counteract dangerous poisons and to cure snakebite, palpitations, vomiting, and loss of appetite. Eating barberries, however, is thought to cause flatulence (remediable with cloves) and dryness and constipation (remediable with sugar and sweets).
